Reserve Cabernet Sauvignon is fashioned in a fruit forward, easy to drink style, yet it reveals admirable complexity and length. Aged for ten months in French and American oak, this medium-bodied wine has a deep garnet hue and aromas of pepper, lush black cherry, blackberry and vanilla. The rich black cherry and plum flavors are layered with hints of vanilla, smoke, bramble, herbal notes and creamy oak that linger on the palate. The finish is soft and lingering with bold, structured texture and integrated tannins complementing the intense fruit.
This Cabernet Sauvignon has a medium brick red color which illustrates the length of barrel aging. This fine North Coast Cab is elegant in its forward ripe bing cherry profile. There is a fine sweet brown sugar note behind the fruit which provides depth before folding into some earthy peppery tones with leather and truffle notes. The palate is super rich and juicy with dark fruit flavors, cassis, plum and integrated cherry vanilla flavors which finish supple and silky.
A classic Cabernet in structure and flavor, Auspicion Cabernet Sauvignon is loaded with juicy black fruit and ripe berries, balanced by silky tannins. The lingering finish is accented by touches of chocolate, toffee, and vanilla. Full in body, this is a complex wine that is ready to drink upon release, yet will continue to develop in bottle for up to 5 years. Grapes were sourced from vineyards located in northern California’s coastal region – an area known for producing Cabernet with rich, concentrated fruit flavors and balanced complexity. Briefly aged in oak, the wine underwent full malolactic before being blended with small percentages of other varieties.

Voluptuous, sweetly fruited, and downright decadent, it boasts awesome aromatics of kirsch liqueur, chocolate, liquid mineral, and baking spices to go with a full-bodied, rounded, supple feel in the mouth. No light weight, with layers of fruit and texture, it stays remarkable fresh and clean on the finish. Count me a fan. Unfortunately, there are only 600 cases to go around, yet the price per quality here is off the charts. If you can find it, don't miss it. This wine is completely made with Cabernet Sauvignon and all the grapes have been hand picked and de-stemmed prior to a 10 to 15 days maceration in large vats. Very small production single vineyard wine from an area just off of Rte 29 in Oakville. The Vineyard is situated right next to Opus One and used to be a source of fruit for them as well. Rich and fragrant with aromas of blackberry and black cherry. The middle palate abounds with cherry, black currant, and blackberry flavors, all elegantly framed in smoky oak. Deep ruby red in the glass with a youthful violet rim. Black currant fruit amplified by sweet vanilla fills the nose. The palate is dry and full with layers of blackberry and raspberry fruit and very soft, rounded tannins on the long finish.

We tasted fruit from vineyards in the best regions of California, eventually settling on two main vineyards: one in Sonoma County's Alexander Valley and one in sunny Paso Robles. The diversity of these two vineyards allows us to make a final blend that expresses the concentration, complexity and richness Layer Cake fans have come to expect.
