Deep amber in color. It has clearly picked up some color from its time in the port casks. The nose has some extraordinary spice and depth with cinnamon, clove, and oak. There are very subtle cherry and vanilla notes underneath the spice that makes this bourbon amazingly inviting. The entry is packed with flavor that balances spice, sweet and heat with cinnamon, oak, vanilla, and cherry notes all coming together perfectly. Things build evenly from the entry to the mid palate with a superb balance of grain, wood, and fruit flavors. The finish is fairly long with the heat transforming to a nice cool mouthfeel and the sweet cherry and spice lingering on. This is the kind of whiskey that gets better and better as you drink through it, and it's very difficult to drink just one glass.
95% rye. We chose rum barrels that had previously been used to age French cognac. Long story short our barrels are vintage and very well travelled...resulting in a rare and immensely complex but incredibly drinkable whiskey even at 100 proof. You smell citrus caramel candy maple sugar vanilla oak hazelnut spice and sherry wood. You'll taste sweet rum sherry wood and soft oak with a finish that's both sweet and dry as well as quick and easy.
Hand bottled after 7 years of aging. It is deeply mellow and richly flavorful with a medium bodied taste. Smooth flavors of vanilla and caramel.

Light golden amber in color, this whiskey has a very full, sweet and inviting nose. There are hints of vanilla and caramel under distinct oak and sawdust notes. Tasted blind, it’s hard to pick this one out as a young whiskey by its nose. The distinct sawdust notes are unexpected and indicate to us some unique barreling for this spirit (perhaps a finish in French oak or first-use lightly toasted American oak?). The entry is a symphony of corn flavors with roasted corn, warm corn bread, and blue corn tortillas. This is followed by some nice heat and spice with a lush allspice, caramel mid-note. The Baby Blue Corn Whiskey has a medium finish which retains the sweet and spice of the mid note and finishes to a nice minty coolness.

Balvenie 14 Year Caribbean Cask is unique and beautifully rounded whisky that finishes off a 14 year maturation process with its transition from whiskey to the rum filled barrels. Lovely bright gold color. Layers of sweetness (the characteristic Balvenie honey, along with vanilla fudge, nougat, and rich toffee) peppered with dried spice and a hint of tropical fruit (papaya, guava, tangerine). Nice viscosity with good grip on the finish.
